EASY CHICKEN PARMESAN



INGREDIENTS

  • 4 chicken breasts , boneless and skinless
  • 1/2 teaspoon Kosher salt
  • 1/4 teaspoon coarse ground black pepper
  • 4 tablespoons flour
  • 2 large eggs
  • 1 cup panko bread crumbs
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons butter
  • 1 cup marinara sauce
  • 1 cup mozzarella cheese , shredded

INSTRUCTIONS

  1. Note: click on times in the instructions to start a kitchen timer while cooking.
  2. Preheat an oven to 375 degrees and spray a baking sheet with cooking spray.
  3. Put the chicken breasts between two pieces of saran wrap or parchment paper and using a rolling pin or flat kitchen mallet flatten it to 1/2 inch thickness then season them with salt and pepper.
